Serial restaurateur Paul Fleming (who started P. F. Chang's China Bistro), Larry Foles, and Guy Villavaso, fraternity brothers at Louisiana State University, opened the first Z'Tejas in Austin, Texas, in 1989. Villavaso and Foles continue to own the company.
