Welcome to the internet home of the largest manufacturer of all natural Swiss cheese in the United States. Brewster Dairy has experienced steady growth in the Swiss cheese market since the dairy was purchased by John Leeman in 1965. Over the years we have expanded our production and warehousing facilities in Brewster, Ohio and added a production facility in Stockton, Illinois. We currently produce approximately 85 million pounds of Award Winning, All Natural Swiss cheese annually.

In 1971, our parents were a young couple and received the news of a lifetime. Unlike the joy brought by babies and weddings, their happy news came in the form of a visa to the United States. Within one month they arrived – one young couple with three small children and a fourth on the way, with one suitcase each in hand and a great deal of faith. By 1973, our Father was busy working hard to provide for his family. By happenstance, he saw the opportunity to create a product that he was closely acquainted with, but was not yet available in the Los Angeles marketplace – high quality fresh cheese, also known as, queso fresco. After several late night kitchen table discussions, our parents decided to take a gigantic leap of faith with their hard-earned savings of $1,500 and began the journey of a lifetime. In 1973, they founded our company and named it Cacique. In Latin America, the name represents the chief of a tribe, the ultimate authority, the very best, and the pinnacle of experience. During those early years, Dad taught Mom how to make cheese and he sold and delivered the fruits of their labor with us pitching in after school and in summer. Our first year was hard but well worth it and soon we hired our first employees and the dream began to take root.

California Dairies, Inc. is the result of a successful 1999 merger of three of California's most financially successful cooperatives; California Milk Producers, Danish Creamery and San Joaquin Valley Dairymen. Cheesemakers, Inc., located in Montgomery County, Texas, was founded by James C. Keliehor, P.E., who is originally from South Texas where he grew up on his family farm. He learned from his aunt and uncle about making dairy products such as butter, butter milk, and fresh soft cheese curds on their dairy farm. After graduating from the University of Texas at Austin as a Mechanical Engineer, he became involved in the food industry when he began working with his cousin, Dr. James C. Curry, owner of Custom Ingredients, Inc.of New Braunfels. Keliehor created customized cheese formulations and produced and sold cheese ingredients to various food processors across the nation while working with Custom Ingredients, Inc. In 1992, Keliehor started his own custom design manufacturing company for automating food processing, Custom Food Equipment, Inc. (CFE). From the inception of CFE, James was involved with major food manufacturing companies. In the summer of 1994, Keliehor was asked by Land O’ Lakes to partner with them on a project to deliver and form fresh cheddar cheese curd without damaging the delicate consistency of the curd. This concept had been tried unsuccessfully for years until Keliehor applied his Positive Displacement Delivery technology to solve the problem. After years of experimentation with Land O’ Lakes and continual trips to Wisconsin from Texas, Keliehor developed and has a patent pending on his design for a Cheese Curd Delivery and Forming System.
