The pan functions as a stovetop wok, maintaining a consistently high temperature from the bottom all the way up the sides. The slanted surface also makes stirring easier while containing splatters and renegade mushrooms and onion slices. Cooking is more comfortable due to the pan's brushed stainless Cool V handle, which stays cool on the stovetop while fitting snugly in the hand. An opposite loop handle complements the main handle for easier transport. Calphalon Commercial cookware is made of heavy-gauge, hard-anodized aluminum--the same material used in Calphalon's traditional cookware lines--and thus heats evenly and quickly for economical stovetop cooking.
