Use and care
Prior to its first use, wash the pan with soap and water. It is recommended that you wash it by hand. It is very easy to clean.
Brush a very thin layer of butter on the interior surface of the pan prior to each use. This guarantees a perfect release and promotes even browning, good flavor, and a smooth, tightly sealed crust. There is no need to dust the pan with flour, which can create an unattractive white crust on cakes and breads.
